Novatel was advised of the dietary requirements of our group well before our stay. On the first night for our group get together, the food was all served on the one table and NO DIETARY INFORMATION was provided in relation to any of the dishes. I had to flag down a waiter and ask about which foods were less of a risk for me to consume being A COELIAC. The waiter could not give me a solid answer and went back to the kitchen to obtain this information. During this time, other colleagues had commenced plating up their meals and due to the multi-tier arrangement of the dishes on the table, I observed the bread tongs fall into one of the salad dishes - WHICH HIGHLIGHTS THE IMPORTANCE OF SEPARATE TABLES FOR THOSE WITH SEVERE ALLERGIES / DIETARY RESTRICTIONS (INCLUDING COELIAC AND NUTS). When the waiter returned to inform me which dishes were less of a risk for gluten, I alerted them to the bread tongs falling into the salad dish, and that with all the food being on the same table - gluten free or not - I was not comfortable plating up some food. The waiter kindly offered to have the kitchen plate up some of the gluten free dishes for me, which I very happily accepted. Going to the Palisade kitchen the next morning for brekky to observe the buffet style set up, had me feeling extremely anxious. When I provided my name and room number upon entering the dining area, again I enquired about the capacity to accommodate for my COELIAC FRIENDLY dietary needs and whether they already had this information that had been sent through weeks before. I received blank looks in response, and again my anxiety spiked. After some discussion, I was told that only the cold dishes - namely, yoghurt and fruit - would be the safest options for me. Not overly satisfied with this response, considering that I would be consuming meals at Novatel for the next day and a half, I spent 15 minutes waiting for the front of house to consult a waiter, who then proceeded to consult kitchen staff regarding this issue. The waiter returned and offered to have the kitchen staff plate my meal up separately for lunches and I was relieved that we were able to find a reasonable resolve, rather than me having to flag down a waiter at each mealtime, when we were running on a tight schedule due to our workplace conference. The issues with supplied food continued with the items provided mid-morning and mid-afternoon. While some things were labelled, there was still a drastic issue with the items all being placed on the same table, with extremely high-risk items (foods consisting of an entirely gluten base such as pastry or cakes and flaky/crumbly in texture, meaning gluten was being spread across the table with these items flaking apart) PLACED IMMEDIATELY NEXT TO items essentially labelled gluten free. In addition, there was significant overlap in the appearance and description of the items that were depicted to be gluten free and those that were not, and placed right next to each other on the table. Ultimately, this was what led to me becoming extremely ill, as I was poisoned (aka glutened, which occurs when a coeliac has unknowingly ingested gluten) due to consuming gluten-containing food. Surprisingly, for our team dinner on the Wednesday night, those with dietary requirements had place cards to collect on the way to our team dining area. This left me questioning why this had not been applied across all meals during our stay at Novatel. The other concern I would like to raise is in relation to my colleagues not being given access to the floor on which my room was located once I had informed both them and reception staff that I was extremely unwell. My colleagues wanted to organise to leave water bottles and other items I had asked for at my door, and reception refused to give them access to my floor. Consequently, my colleagues asked that reception please organise to have some bottled water left at my door, and they were told that this would be organised straight away. However, this never eventuated. Generally, most conference-style catering events implement clear labelling and physical separation of dietary-requirement foods as an appropriate allergen-management measure in a self-service catering environment. Having attended many of these events, in a variety of small to large sized catering environments, my overall experience with the capacity to accommodate dietary requirements has been positive. The poisoning incident at Novatel is an isolated incident, particularly given that I have not experienced an incident of this nature in a long time. Given the size of Novatel and its capacity to be offered as a venue for workplace events, I would like to offer some considerations for catering for dietary requirements: - A dedicated dietary-requirements area/table, physically separated from the general conference catering area/table, particularly from foods containing gluten - Clear, unambiguous labelling of every dish / food item, including gluten free food / vegetarian / vegan, and indicating which of the common allergens each dish contains (gluten, nuts, dairy, shellfish, soy, etc) - Separate serving utensils for every dish / platter - colour coding of utensils can assist - Consider individually packaged or covered gluten-free / allergen meals and snacks, where catering for some meals (eg anything that may be needed on the go or where an individual has complex dietary requirements regarding avoiding a number of allergens) may need greater consideration, and labelling with guest names where necessary - A system for identifying guests with dietary requirements, with their food set aside or served individually - Staff training and clear responsibility for allergen management, so that catering staff understand that people such as those with coeliac requirements are not simply a dietary preference and cross contamination needs to be avoided Many restaurants and catering businesses now demonstrate a high level of diligence in their allergen risk management, staff training and communication. I sincerely hope Novatel learns from this incident and takes proactive measures to strengthen its procedures and minimise the risk of such an incident occurring again.
