Perched high above St. Julian's, the rooftop pool is open all year round, keeping a pleasant 28 degrees even when Malta's famous 300 days of sunshine take a break. As you float in the crystal-clear waters, you'll get knockout views of the eastern coastline.


Thirsty? The High Flier Bar's Caribbean cocktails pack a tropical punch, or you can't go wrong with a refreshing Aperol Spritz (enjoyed responsibly, of course). Soak up the booze with some crispy tequeños – ideal for sharing with friends while you work on your tan. Later in the day, this is hands down one of the best spots in St Julian's to watch the sunset over a glass of chilled rosé.

Later on, come for the guacamole, stay for the picanha beef rump served with chimichurri and cassava. We absolutely loved the pescado encocado – a whole fried fish in a coconut sauce that'll transport you straight to the Caribbean.


Everything's designed for sharing, so we try a bit of everything. And don't forget the drinks! You'll find some great South American wines on the list, or you could (literally) shake things up with a Pisco Spritz or a classic Caipirinha.

"Party time": We couldn't resist the Friday night cocktail masterclass - it's a chance to channel your inner mixologist. You'll learn to whip up a mean Pisco Sour and master the art of the Mezcal Negroni.

Local adventures in St. Julian's and beyond

Step outside and you're in Paceville, Malta's party central. You can dance till dawn in pulsating clubs, hit up a pub crawl or enjoy a romantic evening sipping signature cocktails at a rooftop bar.
