For Mercure Singapore Bugis and Mercure Singapore on Stevens, the adventure extends outside the hotel with the freshest produce from local farms. Discover culinary adventures, passion and enthusiasm from the farmers and the hotels’ culinary team.
In 2019, The Singapore Food Agency (SFA) announced a ’30 by 30’ goal of producing 30% of Singapore’s nutritional needs locally by 2030. In line with this, Mercure Discover Local strives towards a sustainable food and beverage culture.

In collaboration with FoodXervices’ Backyard Productions campaign, Mercure hotels in Singapore will produce a series of unique flavours inspired by local products.
Mercure Discover Local – The Singapore Edition features four local produce, fresh from local farms as hero products.

Winestone is a place where great cooking and fantastic vibes meet. The modern-European restaurant takes pride in its ability to discover the most unique flavours from the freshest locally sourced ingredients.

Homegrown produce

Fresh Eggs 
Egg Story’s Fresh Eggs are produced at N&N Agriculture located at Lim Chu Kang, Singapore. A high-tech, eco-friendly, bio-secured farm and home to about half a million hens which produce about 350,000 fresh eggs daily.

Citrus Fresh Mullet
Kin Yan Agrotech is situated in Lim Chu Kang, near Sungei Buloh Wetlands Reserve. Kin Yan grows a variety of mushrooms such as abalone mushroom, golden cup mushroom and king oyster mushroom which are suitable for the local climate. As the mushrooms are farmed closer to home, it means they are fresher and you can be assured of great quality too.

Farmed Ocean Fish
In collaboration with The Fish Farmer, Singapore’s largest Marine Fish producer, Mercure Discover Local introduces tantalising flavours inspired by fresh catches. The concept is simple: Love Seafood, Love the Sea.

Goat’s Milk 
Hay Dairies is the only goat farm in Singapore since 1988. The farm has more than 800 goats of mixed breed with origin heritage from Minnesota, United States. The goats are fed with Alfalfa Hay from United States which is high in protein and minerals.
Special menu is available in November & December 2021.
