Watermelon Mojito
Makes 1 standard drink:
Ingredients:
45ml white rum
30ml watermelon syrup (or a good handful of watermelon, crushed)
1 lime, juiced
Garnish:
Sprig of mint (3-6 leaves)
Method:
Mix white rum, lime juice and watermelon (syrup or fresh, crushed) in an oversized glass.
Bruise the fresh mint (this can be done simply by clapping the mint between your hands) and add to your glass. Add ice and stir.
Note – if you’re using fresh watermelon crushed and you don’t want any lumps or stray seeds, simply strain the mixture using a standard sieve before mixing with the other ingredients.
