So when your evening calls for a bit of a shakeup, a simple cocktail can really bring the colour and fun to your home. We’ve rounded up 3 recipes from our mixologist experts at Hyde Paradiso and Hyde Hacienda, so you can pick and choose your favourite concoction depending on your mood.

Hyde Paradiso

Ron Daddy

Ingredients: 
• 45ml Ron Zaccapa Rum 23yr
• 15ml Triple Sec
• 30ml Pineapple Juice 
• 15ml Lime Juice 
• 15ml Hazelnut Monin Syrup
Method:
1. If you want to get fancy, first create a coconut sugar rim. 
a. Do this by mixing 1:1 ratio of white caster sugar and desiccated coconut  
b. Rub a piece of lime on rim of half a rocks glass
c. Tap rim in coconut sugar mix
2. Add all ingredients (45ml Ron Zaccapa Rum 23yr, 15ml Triple Sec, 30ml Pineapple juice, 15ml Lime Juice, 15ml Hazelnut Monin Syrup) into a small shaker 
3. Fill with ice
4. Shake until the outside of the shaker is very cold
5. Single strain into rocks glass over ice
6. Garnish with dehydrated lime wheel standing just inside the rim (can use a regular lime wheel)

Salted Coconut Margarita

Ingredients:
45ml Jose Cuervo Silver Tequila
15ml Triple sec
30ml Lime juice 
30ml Coconut water
10ml Coconut Monin
Small pinch of salt 
Method:
1. Create your coconut salt rim;
a. Use 2:1 ratio of desiccated coconut to salt flakes
b. Use a piece of lime to rub the rim of half a coupe glass
c. Tap the rim of glass in coconut salt mix
2. Add all ingredients (45ml Jose Cuervo Silver Tequila, 15ml Triple sec, 30ml Lime juice, 30ml Coconut water, 10ml Coconut Monin)  into small side of shaker
3. Fill with ice
4. Shake until the outside of the shaker is very cold
5. Double strain into a coupe glass
6. Garnish with a floating dehydrated lime wheel (can use regular lime wheel)

If you’re looking for a sweet taster to follow a hearty main or to soften the aftertaste of a tangy cocktail, then the Strawberry Cheesecake will deliver.

Strawberry Cheesecake

Ingredients:
• 30ml White Cacao Liqueur
• 30ml Strawberry Liqueur
• 15ml Baileys
• 45ml Coconut Water
• 30ml Strawberry Syrup (Monin brand)
Method:
1. Pour all ingredients into cocktail shaker*
2. Shake vigorously for about 7 - 8 seconds
3. Double strain into a coupette glass
4. Garnish with strawberry powder (you can create your own by blitzing dried strawberry fruit into a fine powder) and crushed biscuit (our pick would be Arnott’s Scotch Finger - crush in a pestle & mortar, or add a few biscuits to a plastic bag and crush with a rolling pin).
*You can blend it, however only use 2 cubes of ice and note, the finished cocktail won’t look quite as fancy.
